The small farmers in this region typically cultivate sub-varieties of traditional Ethiopian heirloom varieties on small garden plots around their homes.

La station Koke Shalaye est un lieu situé dans la région de Yrgacheffe ou les cerise de café sont transformées en grains de café vert. La station est située à 1973m d’altitude et les cerises proviennent de 1890 petites fermes.
“Supernatural” est un procédé qui permet d’augmenter l’effet su séchage naturel au soleil en augmentant une fermentation aerobique controlée pendant le processus de séchage. Les petits producteurs de cette région cultivent typiquement des sous-variétés des variétés d’origine éthiopiennes dans de petits jardins se trouvant autour de leurs maisons.
